The "About This Mac" dialog will get you
If the chip is an Intel chip, you can use the free MacTracker application to find the Intel model number. E.g., a 2018 MacBook Air would have a 1.6 GHz Intel Core i5 (8210Y) ("Amber Lake") CPU. With this information, you can go to Intel's site (Intel Product Specifications – Processors), and do a search (e.g., for "8210Y") to get a processor description page (e.g., Intel® Core™ i5-8210Y Processor 4M Cache, up to 3.60 GHz).
If the chip is an Apple Silicon chip, it will be a "plain" M1, M2, M3, or M4 chip. The digit refers to the generation and therefore the M4 would be the latest and greatest "plain" Apple Silicon chip.
