so when I use an app on my phone ( music for exemple), my watch display a different screen where I cannot see my widget or normal time display.
Is there a way to remove that screen to pop up when listening music ?

not that I know, but I haven't spent much time browsing settings->* of the watch to look for an option
if you do and do not find it, and if no other post a reply to your post with a solution then you can suggest apple add one using
but of cause it could already be changed in the watchOS 26 users of the beta could shed light to that
1 or 2 clicks on the crown should send you back to the normal std. watch face
