if i have converstaion on text message, can i delete both sides of the concersation on both phones from my device?

Only if you did so within the 2 minute period to Unsend the message, otherwise they will stay on your recipients device and deleting it will only delete from your device.

And Unsend only works with iMessage. Also, the recipient's device has to have iOS 16, iPadOS 16.1, macOS 13, visionOS 1, or later. If they usering an earlier version, the message may not be deleted.
Once a text or email is sent it is “owned” by the recipient. You cannot delete their copy, either technically or legally.
