Since yesterday the home screen on my Apple TV is completely blank. Everything else works fine. It still shows "Home" in the top left corner, it shows the menu on the left, but there is nothing at all on the home screen. If I go to Hulu or Paramount or Apple+ it will show all my shows, but nothing at all on the home screen. I tried restarting and checked to make sure there are no software updates pending, but nothing has fixed the issue.

Ahh I see, The Apple TV App screen is blank.
The Home Screen is where you see the Apps, and you can select the Apple TV app that get's you a blank screen.
Try unplugging the Apple TV, waiting around 30 seconds and plug it in again.
What do you mean blank? What are you expecting to see exactly?
How are you going to Hulu or Paramount if the home screen is blank?
The Home Screen only shows apps. If you can access your Apps, then it's not blank.
Can you post a picture of what you see or don't see exactly?
Completely blank. No “what to watch next” no featured programs, no nothing. If I go the the menu (top left) it shows my profile at the top, followed by Search etc. that also lists my channels and apps and I can go to those from there (incl Hulu), but the home page, that usually aggregates all that is not there.
So from here if I click on Apple TV it takes me to an utterly blank home screen where I can usually see a line-up of the new/unwatched episodes of the shows I watch across all my apps/channels.
