apple are good at taking my ££ but not at providing the music I pay for or help. Where can I get my music?

Are you saying you are subscribed to iTunes Match? Or to Apple Music?
What music are you trying to get exactly?
iTunes Match and Apple Music, offer the option of matching or uploading songs in a music library on a computer to the iTunes Store or Apple Music service catalog.
If you had an existing library on a computer where you turned on the Sync Library option either in iTunes or Apple Music apps, then turning on the same option on the iPad (Settings ➜ Apps ➜ Music ➜ Sync Library)

Beyond that, if you are trying to access songs and albums you purchases from the iTunes Store, you don't need a subscription for that.

im subscribed to iTunes Match but not Apple Music.
the music was from an existing library on a computer.
It was fine when I had both but now I have just match they have gone from my library. The albums are there but when you open, tracks are greyed out.
You don't need both subscriptions. Either one will work in its own.
However, not sure what happens when you cancel one. Of the songs came from the one you cancelled, it may require the other service to sync the songs form a computer before they can be available on your iPad.
Make sure, "Sync Library" is turned on your iPad and that the iTunes Match subscription is actually active and available on the iPad.
Go to Settings ➜ Apps ➜ Music ➜ Sync Library and make sure it's turned on.
Then verify iTunes Match is active in Settings ➜ Account ➜ Subscriptions
