What email exactly?
Apple Music and the App Store use the Apple Account signed in on your Mac in System Settings ➜ Apple Account ➜ Media & Purchases.
If you change this, you will lose access to your previous purchases, but existing apps downloaded from the App Store app will remain tied to the old Apple ID and require it to update.
Or do you want to update the email address associated with that account?
