I own a Macbook Pro 2017 (no Touch Bar), and since its maximum OS is Ventura, I want to know how long the OS will last before I need to upgrade. I think Ventura is getting security updates still, but it might stop by the end of the year.

The mainstream third-party browser developers have been discussed, but even Apple Mail and Safari on Ventura should be ok while Transport Layer Security (TLS) v1.3 remains de-rigor.
How long you can continue using Ventura on that 2017 MBP will depend on the third-party applications you are using and whether those vendors continue support on Ventura, and you need features in newer versions that are not available on Ventura.

it would depend on each website, it's each sites which set the browser requirements of their site, some would likely last "forever" some would maybe only support the latest 3 browser versions
you can try other browsers which still support your macOS version
about apps then the ones installed would likely keep working, newer ones could require a newer macOS version than yours, and the installed ones would likely no longer get updates, and if you deleted them you would not be likely to get them back.
Ventura currently gets the latest versions of Safari – but once Apple releases macOS 26 (Tahoe) in the fall, that will no longer be the case.

Ventura is likely to be eligible to run current versions of third-party browsers for several years. I believe that, as of today,
Browsers like Brave, Firefox, & Opera will provide protection far beyond Safari. Mojave is still my daily driver.
