Recording and transcribing audio from Safari

I am a journalist and just discovered Notes transcriptions on my iPhone. I want to do the same on my Mac Book pro (with Intel processor) from Safari instead of a phone call. Looks like from what I can find that the transcribe function for Notes on Mac doesn't work with the Intel processors and only M1 and forward.

So, am I missing something or is there a work around? I would prefer to not get another program if possible.

I am running 15.6 currently.
