It is bit confusing how to get started. Create your own emoji with Genmoji on iPhone - Apple Support (CA)

  1. Tap a text field, then tap  or  to switch to the emoji keyboard.
  2. Tap  at the top right of the onscreen keyboard. Do not tap "Genmoji" - otherwise you can only select photos that have been used for a Genmoji.
  3. Enter a description in the Describe a Genmoji field, like “1Famousdude on top of Mount Everest.”
  4. Now select a person from People&Pets. At first you will only be offered existing Genmoji's. Tap "select other .. " at the bottom of the screen.
  5. Pick a different photo of yourself.

Whatever you pick - the resulting Genmoji will always be a headshot, showing you en face, just the face and the shoulders. occluding most of the background.

When I want to create a different kind of emoji, showing me standing somewhere, I create a sticker, not a Genmoji: Make stickers from your photos on iPhone - Apple Support (CA)
