How do I add projector as second monitor again on my Mac mini?

Quick details: Mac Mini 2023 M2; 8GB

I have had a projector hooked up as a 2nd monitor to this mac mini for awhile. Then, the other day it was just black. It recognizes some sort of signal, but doesn't show up as a monitor in displays. If I plug another monitor in it works fine. If I plug another computer into the projector setup (HDMI network extensions) the projector works fine. It's just when I pair the two together now.

What could have happened in a setting or something someone might accidentally click that could cause this to happen?

When attempting to utilize a projector as a secondary monitor on a Mac, ensure that the projector is connected to your Mac using the appropriate cable (e.g., HDMI, VGA) and adapter, if necessary. Subsequently, navigate to System Settings > Displays and select the projector. From the “Use as” menu, select “Extended display” to treat the projector as a secondary screen, enabling you to drag windows and applications onto it.

If the projector is not displayed under Displays after following these steps, please verify the connections and ensure that the projector is properly configured.
