So to summarize that, you installed the virtual machine app Parallels, created some files with data you care about (in some partition?), didn’t back up those files to storage elsewhere, then deleted some macOS-related partitions, and are now having issues?

If this all happened within Parallels, you’re going to want some help with Parallels. Somebody that knows Parallels better may be able to help you recover those files from whatever happened here.

If the partitions deleted were accessible and used outside of Parallels-specific private storage, you likely have larger issues and may need to reinstall macOS.

Modifying partitions should only happen when there are backups of everything.

If you want help here, you’re going to need to provide more details.

And if this happened within Parallels, you’ll want or need help with Parallels data recovery.
