Safari randomly inverts colours on new 2024 M4 MacBook Pro

occasionally whatever Safari page I'm looking at will kind of invert colours, but not entirely. It's usually the background that goes from white to dark grey, almost nothing else changes. It can make it really difficult to read whatever I'm reading.
It's always isolated to Safari, and always isolated to whatever page I'm looking at, at the time (that being said, I want to emphasise that it's not specific to a certain URL, it has happened to many different websites). At some random point it will switch back, but it stays "inverted" for an amount of time that's pretty inconvenient. Reloading the page tends to fix it, but I can't always do that in some cases.
I've attached some images of what this glitch looks like when it happens. In this case, I was reporting some issues with my house to the property manager, and the inversion made my text go white against a white background (I was only able to see what I was writing by highlighting the text, as you can see in the second image). I wasn't able to reload the page because then I would likely have to start the reporting process all over again.
I do use some extensions (Wipr and Vinegar), but I've never had this issue with those before now. These extensions aren't enabled for every website either, so I'm really not sure if they're the cause of this issue. It only started maybe 2-3 days ago. I've double checked my accessibility settings too, and the 'screen inversion' setting is 100% turned off.
Any help would be greatly appreciated.
