This is not a Numbers problem, it is a Finder problem. I don't know what the issue is exactly but I have a lot of files of various types that are that way. I want to show extentions so it doesn't really affect me. Select the files, right click on one or more of them and select "Get Info" (if more than one file is selected don't use "Get Info", use "Show Inspector" which you can see by holding the Option key). Click on "Hide Extension".

Yea, I have done that, but hasn't been consistent. I agree that its a Finder issue, plus possibly an iCloud issues. When I create either a Pages or Number new file, it automatically saves it in iCloud. And toggling the "hide Extension" feature sometimes works, sometimes doesn't. If I move the file to my drive, which is also stored on iCloud, it tends to be more consistent. But several times after doing this I lost permission and had to close the file and reopen to continue working. Appears that Apple needs to do some Finder housekeeping.

BTW - I did submit a bug report to Apple regarding this issue.
