If you do not want to fool around with Canon driver support, the paid (free trial) of VueScan Professional
supports this scanner (and the LIDE 400) without any Canon drivers. So does the built-in Apple AirPrint support when connecting the LIDE 300 with a USB cable.
I just hooked my LIDE 400 up (USB-cable) to my old MacBook Air running Catalina 10.15.7. In the Printers & Scanners panel, I added the new scanner which was recognized on the Add panel. Clicking that LIDE 400 entry, activated the Use selector and it auto-filled with LIDE 400 Scanner. I clicked Add.
At this point, Apple's Image Capture, or the current version (9.8.46) of VueScan Professional scanned a document to PDF with the LIDE 400. It should do the same with your LIDE 300.
