I want to create a 12 hour alert and an 18 hour alert so that I get alerted for calendar items the evening before something happens early the next day. Is there a way to add alert times to the iPhone list?

The built in calendar doesn't allow you to edit that list. However, there are third-party calendars that are more configurable. WeekCal allows you to add your own choices. I'm sure there are others.
