Can't control my Apple devices connected to my HomeKit

I got two Apple TVs 4 HomePods. Two logitech cameras including a doorbell.

and two iPhones.

and a iPad.

and a MacBook Pro.

and have absolutely no controls over my units.

good internet but Siri has problems connecting to the internet.

can’t airstream when I want but does it by itself when I don’t want.

used to work great but every update messed things up for a while. Used to be able to get it working again but now I I just cat bother!!! My cameras are always off line when I need them and online when I don’t. I have packages arriving without notification but never a notification when I need it.
