How do I change the currency without changing the region in Ventura?

I've been coping with Ventura for a while, I don't like it but I'm already here (and my backups where long overwritten now), among many many issues I noticed just now that my preferred currency is not what Spotlight converts to.


This was an "upgrade" — a generous way to describe it — from a earlier macOS so my preferences were already there. But I've noticed things kind of reset themselves sometimes, and I do mess a lot with the system (not that I'm allowed to, in this locked down nightmare) so I didn't think much of it and went to the settings to set the currency again, or for the first time, honestly this made me forget if it was previously set (it was.)


But I found no setting of the sort. Not without bundling it with another set of settings (i.e. a country, locale) at least:


I really don't want to reinstall Mojave; I've taken care of keeping copies of my apps compatible with it, but I think may have missed a few, and with Apple's servers now appearing in crowd-sourced reputation firewall block lists, the App Store is not a reliable source to get them, in fact it ends up "damaging" my apps instead.


Where do I ⌥-click (or whatever) to get it to show… or what's the command, or preference list file, or

.mobileconfig setting to install/push to set it back?
