It’s usually just how Apple Mail handles formatting, especially when switching between plain text and rich text. Sometimes it misreads spacing or tries to "help" by adding extra space where it thinks it's needed. It can also happen if you're copying from another app.

You can try a few things to fix the issue…

  • Check your formatting settings. Switching to plain text should avoid extra line breaks.

  • If you’ve got smart quotes or dashes turned on, try turning those off in Mail’s preferences under "Composing."

  • If you're copying and pasting text, use a plain text editor like Notes or TextEdit first to strip away any hidden formatting before pasting it back into Mail.
