I received an updated debit card yesterday that I use for my Apple Pay on my phone and IPads. I am trying to update the expiration date and security code and every time I try to remove the current information and put the new in, it says that information is already on there. Using iOS18.5

Specific card details are controlled by the issuing bank. Frequently the virtual card has a different account number, expiration date and security code. The actual card information is only referenced in Apple Wallet as a convenience to the cardholder. The physical card details are never stored on the iPhone and the limited reference information is encrypted and only decrypted when you request to view it.

… there are no changes to be made by the cardholder.
