Why does updating from Ventura to Sonoma move all my file to iCloud??

Not wanted

No option in the migration to NOT have that happen

Even after stopping this and moving all my files back locally the space is NOT recovered

And now all my data added dates are destroyed as they appear to be today.

OF COURSE I am not near the free iCloud limit, but NO I DO NOT want to pay for more space, I want my files to be left alone exactly where they are.

I have more machines to do and want to know how to stop this madness happening in the first place.

Sounds like you turned on Desktop & Documents storage in iCloud. Go to  > System Settings > [name on top] > iCloud > Drive > Desktop & Documents Folder. Make sure the switch is turned off here.

It is not turned on by default after an update, but you will have the option to turn it on following an update and you may have inadvertently done that.
