The above is true both on my Mac and my iphone. In unshared albums, this is not a problem - I just click the Favorite heart. But that heart doesn't exist in any of my shared albums. What can I do?

There is nothing you can do.
Shared albums are very different from the standard albums. The name "Shared Album" is a bit misleading, but the photos in the Shared albums are not a part of your Photos Library, as they might be shared by several subscribers.They are stored separately and just shown in Photos for convenience.
To manage the photos from a Shared album you would have to import them to Photos (or use the original of the photo you shared) and add them to a standard album. Your own copies of the shared photos you can tag as favorites, add adjustments, add titles etc.
In Apple Photos, I can't mark photos in shared albums as Favorites.
