How can I ensure my default email is always used in the Mail app?

IOS 18.5

I have a number of email accounts linked to the Mail app

I found out today that a number of emails have never reached the intended destination, and I can see why

When I create a new email the source email address defaults to the correct one lets say 111@xxx.com

This is as configured in Settings > Apps > Mail as the Default Account

But as I enter the email address of the receiver it automatically switches to 111@yyy.com as the source and this is the issue.


Why is the Default Account being overridden, how do I stop it and ensure that 111@xx.com is always in use.


Now I know about this I see the same behavior on my iPad and iPhone
