I have two homes. I don’t know when this happened but I now only have one in HomeKit. Is there a way to get the other one back with the accessories and automations?

If the missing Home no longer shows in the Home app, particularly if you reboot both the router/wi-fi access point and any devices capable of being the Home Hub in that home, then you will likely need to recreate the Home from scratch. See Add a smart home accessory to the Home app - Apple Support.
