How do I transfer all data from iPhone 15 with eSIM to iPhone X?

There are two phones on the same iCloud but different phone numbers. The new phone with Esim will be 'given' away or fully 'deleted'. So I would like to merge everything from both phones into the first phone. Really just transferring data from phone B to A; One-way merge. I need help in doing so without losing any photos, contacts, message history, and more.

All data needs to go from an iPhone 15 to an iPhone X.

Thank You!

If both iPhones are running their respective most current iOS versions, you can’t transfer all data from iPhone 15 to iPhone X. There is no support for restoring a backup from newer iOS to older, only same or newer, and iPhone X can’t get to iOS 18.5.

You’ll have access to the same iCloud data and same purchases and (with iCloud Keychain enabled) passwords, but not to anything stored local to the iPhone 15.

The eSIM isn’t central here, and at most getting the cellular plan transferred will be a discussion with your carrier.
