My Apple Watch isn't measuring Blood Oxygen every 5 minutes at night

Hello, I need your support. I have bought Apple Watch for my mother to measure oxygen in blood in the night during sleep. I was told in Apple Store that frequency of measurement in the night is every 5 mins. This was confirmed by Apple Support in Poland. Unfortunately this is not a case. I turned off Theatre Mode and In Sleep Focus and switched off Energy Saving. Background Refresh is switched on. Could you tell me how to get results every 5 mins instead off few times in the night? thank you

Just to add to the good information already offered, I would like to suggest you install the AutoSleep app on your Mother's watch. You can do so by selecting it on your iPhone, opening the Watch app, then scrolling down to Available Apps. While this app does not do exactly what you want, it gives enough information for my doctor and me to adjust the O2 from my concentrator at night when needed. Here is an example of a report.
