Why can't I put auto lock to 'Never' on my iPhone?
Why cant I put my auto lock on never? I dont have it on low battery mode nor do I have a corporate or school phone?

Those are the only reasons that I'm aware of other than being a managed device. Try a Force Restart on the device and see if that helps. Force restart iPhone - Apple Support
Do you use Apple Wallet? Do you have a work email, not necessarily a phone provided by work?
We can see if anyone else shows up with an answer, or you can contact Apple Support for additional help.
Do you have any VPN's on your device? VPN's can cause plenty of issues on iPhone and are not needed as if you state this is not a managed device. If so, don't just turn it off but remove it entirely.

In most cases when Auto-Lock's Never is not an option, it's due to mobile device management restrictions set. Go to Settings > General > VPN and Device Managment, and just confirm that there are none. Also where did you purchase your iPhone or has it ever been repaired? If the answer is no to all of those you may want to contact Apple Support with the link Chris provided.

Thanks for the help, but sadly it did not work. Maximum of time is 5 minutes.

The most only thing not mentioned is Screen Time restrictions.
Where would that be in Screen Time?

Can't find anything, but whilst grasping at straws it's always worth turning it off.
