My emails were all there and I picked up my phone five minutes later and now they’re gone except for one. I’m furious over this. I have restarted my phone twice and only one the one email stayed on my phone.

The master copy of all emails is on email servers. The iPhone just downloads them from the server. If you lose the connection to the email server or servers, or if you change the password, or the server goes down, you will lose those messages.
So first, what email account or accounts do you have? (iCloud, Yahoo, AOL, Microsoft Exchange, Hotmail, etc)
Have you changed any passwords recently?
Do you have either Wi-Fi or cellular data (or both) enabled?
