Have you tried turning Lockdown Mode off? Settings > Privacy & Security > Lockdown Mode.

FWIW, I believe your iPhone was not hacked. You’re seeing strange things that could be a bug or a glitch, (which can be common when dealing with software and electronics) and then you’re assuming you were hacked.
So here’s some facts: it’s very, very difficult, time consuming, and expensive to hack iPhones, and it requires a smart and skilled individual to do so. Not even the FBI can hack iPhones. So do you think you are worth all this? For me, the answer would be no. For you? Only you can answer that.
I wouldn’t recommend trying to figure out where they are that may put your safety at risk because they may already have your location data. I would recommend though is that you report it to your mobile carrier and apple also if you think any information they may have compromised you should report it to your local law enforcement and identity theft.gov also you may need to change your location settings for your apps to the correct preferences depending on what type of app it is. I know that I am hacked because I have a two month old IPhone 13 and a 15 Pro Max. I was not able to receive texts iMessages or calls so I took to The Apple Genius Bar. Timothy, from The Northridge Apple Store looked at my usage, He said,” This is not even possible.” And I said “ What???” My usage for 14 days was 737 gb of data. This, on a phone I had not even used, I kept using my other IPhone. He told me he had never seen anything like this , except he had seen high data usage but it was a hacker using data for crypto mining. But he then looked at my calls and texts. ( I was never able to complete the set up of this IPhone. I still am unable to look up my own data usage, by myself)
He factory rest my phone . We set u an entirely new Apple Account. Then he showed me to go to Privacy setting and go to both “ lockdown” and where you do emergency reset to stop sharing. As we began the “ stop all sharing” we got a message that read( unable to stop sharing. Go to the home and Fitness Apps and stop sharing from the app.) We tried to do this, we did do this. Then we repeated and it still said we were sharing now from Home Notes and Fitness.
Timothy from Apple told me to return the phone, or send it back to Apple. I, stupidly, paid full price, for an IPhone that’s locked to my carrier , I think it was just out of convenience as I have only purchased unlocked phones before this. My carrier sent my phone to Assurion? I believe that is who my iPhone insurance is through .
I got back a factory reset device, that I once again , set up. Only to find, I am now sharing through Books, Notes, and fitness and am unable to make changes to may things as I am unable to toggle certain things and these things are Greyed out.
Before this happened to me. I did not believe that most phones would ever be be remotely hacked. I knew it was something that could probably be done, if the work and time were worth it. ( No sane hacker, would bother with me and my pile of dust.)
If anyone claimed they had been hacked, I would reply,”Have you tried getting of the drugs?” Which I would say jokingly, but truly. Like,” You certainly must believe yourself to be of incredible import, if you are worth hours and hours of, Elliott’s, ( my dream hacker), time.” I grew up in the Silicone Valley and my father owned a company that made hard drives. However, I did not inherit his genius. Nor, do I have any interest in it. That, is why, finding out, that my unused phone, after 14 days, had used, 737 gb of data. I am terrified it’s in my name and being used for illegal activities. I am now more worried, especially after what was revealed to me at The Genius Bar. The person helping me, Timothy, and I, began looking at all calls and texts ( it showed up as my Apple Accounts data usage. But on another device. I live alone and don’t even have a laptop.) We saw outgoing calls, were being made minute by minute. He showed me where there were 9 calls to various numbers all outgoing at the same minute. He had never seen anything like this. It’s really scaring me. Assurion, obviously cannot help me. My carrier are only interested in making a sale. Unlike Apple Stores, they have no geniuses.
I don’t want to understand this. Nor do I have any interest in hacker stalking.

I’m worth less than zero, and am really unsure. What is really scaring me is that my unused phone had used 737 gb of data. All of the employees at The Apple store came to look at my phone. Which really scared me. I don’t believe anyone is after me personally. The data usage makes no sense.
Yes, lockdown mode restricts many features. Consider checking out the link I provided earlier that’ll explain what Lockdown Mode does.
So you’re telling me, you (or Elliot) is using over 700 gb data in 2 weeks, and your carrier is like “meh, happens all the time.”?
Why won’t your Carrier help you? Can’t you switch carriers at this point, to see if the problem persists? Otherwise it seems like you can’t do much more than continue to work with Timothy to seek a resolution.
Are we sure the 737 gbs data usage isn’t a bug or error of some sort? Has your carrier confirmed that this is a solid figure? That 737 gbs were actually used?
Is there an add-on “coffee shop” VPN app installed here?
