How can I revert to an older version of Numbers app on iPad?

New Numbers Update adds @ Operators to my formulas

What are they (I can see no documentation from Apple)?

Why the blue flags?

What are all those @ symbols in front if my if() functions? How do \i remove them?

Why do sheets stake 12 hours to recalculate …and still waiting? How do I revert to stable version of Numbers until this carbuncle is resolved and where my sheets just work?

Numbers has incorporated "dynamic array" formulas similar to Excel. They bring many conveniences.

The blue flag with the @ operator is alerting you that Numbers has made a change (adding the @ operator so your old formulas will still work as before). The @ can mean you want to refer to one cell in a column rather than all cells in that column.

If you are getting the correct results in cells then you can click a blue flag and in the nested menus within it find the option to clear all flags.

Slow calculations may be caused by the types of formulas you are using.

What does your document look like? What formulas are you using? Can you post a screenshot?

(Also, if you haven't done so already, you might try restarting your Mac.)
