Finder - I don't want to see Date Added

Each folder that you have opened before will retain the settings it had.

Defaults apply to new folders.

But when you have a window already open in List View, and navigate to other folders in the same window, then of course columns do not change; just follow Yer_Man's advice and choose the columns you want.

In the Finder Window control-click on the offending headings and de-select them:

Clicking "Use as Defaults" in the "Show View Options" window should apply your column setup to all folders of that type (e.g., all list views).
