How do I share Apple One subscription with a widowed parent while maintaining separate purchase cards?

My father in-law recently lost his wife, and we've added him to our Apple Family to share our Apple One subscription.

Now we get charged for all his purchases, and we get the email to tell us what he bought.

Can we continue sharing our purchases with our kids, e.g. Minecraft, but have his purchases to go to his own card?

No. If purchase sharing is enabled, the organizer pays for all charges. You can turn off purchase sharing if you wish. Or, he can add funds to his Apple Account (which would be used first before your card is charged).
