How to redownload macOS on an outdated system?

Hello I just deleted my macOS and I am trying to reinstall it but I haven’t updated it since 2017 so it is not letting me redownload Mac OS I am trying to find out how to redownload Mac OS?

Do I Install MacOS on Update disk or on Macintosh HD - Data disk? Hello! I wanted to reset my Macbook Pro 2017 to factory settings, so I erased the Macintosh HD - Data partition. I restarted and now I dont have an operating system (I also did notice when erasing the HD - Data partition it unmounted from the internal disks tab). I am now booted in disk utilities and I clicked on reinstall macOS. It is now asking me on which disk I should download the OS - on disk Update (which didnt exist before) or on HD - Data (for some reason Macintosh HD doesnt exist anymore even though I didnt delete it). I want to macOS back on my computer but my computer won't let me erase the disk I want to get my older MacBook up to the latest version and the computer will not allow me to delete the disk to get the newer version.

Use macOS Recovery on an Intel-based Mac - Apple Support

Select install macOS.
