You can update an iPhone 8 to the latest release of iOS 16 – currently iOS 16.7.11. If there are any future releases of iOS 16 (e.g., security patches), you may be able to upgrade to them if and when they come out.

The iPhone X cannot update past iOS 16, either. You need an iPhone XR, XS, XS Max, or later to do that.

Note that the oldest models that are compatible with iOS 17 and 18 might be approaching, or at, the point where they no longer get new major versions of iOS. For instance, the iPhone XR originally ran iOS 12 – which means it has already received six major version updates; and it only has 3 GB of RAM, the smallest amount of any iPhone which can run iOS 17 and 18. Maybe iOS 19 will run on it (Apple hasn't said), but that is not the way to bet.

If one is looking for an iPhone that is likely to receive iOS updates for years to come, the iPhone 15- and 16-series phones would appear to be the safest bets.

The end of the update line for an iPhone 8 is iOS 16.7.11. If your iPhone is updated to that, it cannot go any higher. That means if you were hoping you'd be offered iOS 17 or 18, that will never be possible. And if you need anything higher the highest version of iOS 16, then you'll need to retire your old phone and buy a new one.
