How do I enable a hyper-secure mode on iPhone that requires a password to unlock?

like an "airplane mode" where we can choose to easily disable face and thumb ID? then turn it back on when the time is right?

No such mode exists.

However, you can press and hold down the sleep and up volume buttons to invoke the shutdown screen, then dismiss it by tapping on the "Cancel" button. After that, a passcode will be required to access the iPhone again, and re-enable FaceID or TouchID.

There is Lockdown mode, but that does not alter the way to unlock the device.
