Why is my iPhone making me double tap to access games?
I cannot download a game or anything without double tapping and I’m not understanding why I thought I turned off all my double tap

You either double tap to download from the App Store or you have to enter your Apple Account Password. One or the other is required. Personally, double tapping is far simpler and less time consuming. It's a failsafe guard to ensure you really do want to download/purchase something.
