Unable to print booklet using Sequoia 15.4 and Pages 14.4 on an iMac mini M4

For years, I've been using Pages and an iMac 2017 Retina Fusion, to design choir programmes as booklets, using Printer Formatting.

Recently, I have lost that ability to print booklets with a new and otherwise wonderful M4 Mac mini, using Sequoia 15.4 and Pages 14.4. Every other page is upside down and in reverse order …
