I have a 2012 Mac Mini that still runs like butter :) I'll get a new Mac sooner or later, probably another Mini, but in the meantime, what advice can you guys give me for keeping this old girl safe online?

Apple still provides XProtect updates for Macs even older than yours: Protecting against malware in macOS - Apple Support. The latest one was issued 45 minutes ago.
if it was me then I would just get a browser that still support the older macOS version maybe like firefox
also because it can't run higher than catalina and apple may not be sending out that many security fixes for that, then that does not make the computer a beacon to criminals that here is a computer they can try to compromise.
and if you want to go to shady pages then maybe do it from a browser you know to be uptodate
