I’m about to order HomePod mini’s. I’d like to plug them in and set them up and start using them right away. Should I order accessories or is everything I need in the box already?

You don't need any extra accessories. It includes its power brick and the permanently attached USB-C cable.
You do need to own an iPhone or iPad to set them up and use them though.
