Separation of watch and phone messages

My watch and IPhone updated, my previous experience was when I cleared, I had a choice to go in and change it off my phone. Why is it now eliminating that both on my watch and my phone and I only found out the hard way. Can we separate phone and watch as it was previously. Can we go back?
