How do I keep certain folders on my hard drive instead of iCloud for offline access?

My Documents file, like everything else, is automatically put into iCloud - and removed from my hard drive - meaning that I can't access it without internet service. I understand the benefits of iCloud, but I need access to my documents when internet is not available. How can I choose that at least certain folders remain on my hard drive? I have plenty of space for them. [I still use my Time Capsule, but I don't think it offers access from afar.]


Suggestions are most welcome!

Turn off optimization in system settings > Apple Account. Only optimized systems offload files into an iCloud only status and only when space is needed on your device. Turning off optimization allows all files to remain on your Mac and still sync across your devices.
