How to get a new device but avoid Apple Intelligence

My old MacBook Pro died and I do not want the built-in local apple intelligence capability that is on the new devices. I know you can supposedly toggle it off where the Siri setting is, but based on how hard it is to kill Siri, I don't really trust Apple to actually turn it off. I'm looking for solutions of how people have gotten around this either by one disabling it locally and in a way that they think is actually effective or two buying the latest model that does not have local AI capabilities or three a completely different brand. I use Apple device devices for my whole company and I'm really frustrated that they are doing this because it is going to push me and all my employees to another brand eventually.

Please note that I am not looking for a lecture on how AI is built into all of the services already, that functions differently. I am not a luddite. I make use of AI all the time but I use services where I control what information I am feeding it and I do not want Apple monitoring everything I do, including using optical recognition to read what I am working on in encrypted applications, and sending that back to their AI to train on.

If you don't want your information shared, you would only buy a device that has local AI Processing. It is the server based processing where you should be concerned about your personal information. I would recommend to purchase a device from a manufacturer that you do trust, whatever that is.


Don't forget Apple is the company that has taken heat for not being able to access devices because they do not save users information. This has been seen through the FBI warrants to unlock devices, where they are met with a no can do. Also Siri has taken heat, because it does not gather the information about its users like Google has done by reading Gmails and tracking web searches. When you cancel an Apple Music subscription, Apple does not even save your playlists, where users have complained they should keep that data in case they want to subscribe again.
