How to set up a mac mini as a SMB file server forcing the use of 256 bit encryption on the connection

I have a Mac mini acting as a SMB file server to both Mac and Windows clients. I can encrypt the SMB communications. But the server selects the 128 bit encryption methods even though the 256 bit encryption methods are shown as available. I wish to force the use of the 256 bit encryption methods for all clients. How can this be done?
