Apple Music converted my MP3 files to M4a - Why??

So I have an older car that I just installed an older Alpine stereo in. It has a USB input, so I bought a mini USB flash drive that I want to load music onto. All my music is ripped from CDs I own, not purchased from Apple, in high bitrate MP3 format for just this reason - a lot of older car stereos will not play AAC (M4a) files. So I go to my music folder on my computer to copy files onto this thumbdrive to find out that not all, but a lot of my MP3 files have magically been converted to M4a files and now I cannot use them for my car stereo without re-ripping the CDs back into MP3 format. What the ****?! Why would Apple do this?! And don't get me started on the issue of my album artwork constantly disappearing. Kinda makes me want to ditch using Apple Music - any suggestions?. Can we just have simple old iTunes back?

Have you ever had a subscription to either Apple Music or iTunes Match? If so, did you use this subscription to migrate your library from one computer to another? Tracks matched with the Apple Music catalog will typically download as 256k AAC files when downloaded to another computer, or after freeing up local space using the Remove Download option, and then later downloading to use locally.

I know Apple uses M4a (AAC), but I have no purchased music from Apple, zero. All my music I ripped directly into iTunes (back when it was iTunes) manually from CDs, with the import settings as: MP3 encoder, 320 kbps. I'm looking at the import settings panel right now, and it still displays this setting. All those files that the Music app draws from are now M4a files, not MP3. I'm not crazy. How did this happen? (Been on Macs since 1990 - never touched a Windows machine in my life.) Side note: I do have some purchased files from Bandcamp, downloaded as 320 kbps, and they are all still MP3. Something is fishy.

The only thing I can think of is that at some point iTunes or Music wasn't respecting your preferred import method, but you didn't notice it at the time. Those settings wouldn't have transferred from iTunes to Music. I've already discussed the only other possible mechanisms I can think of that would result in a change of format after music has been ripped to your computer, which don't seem to apply.

This isn't a thing that happens. iTunes Store purchases are .m4a, and matched items downloaded from an Apple Music/iTunes Match subscription would be. CD rips might default to .m4a on first install. iTunes for Windows has a feature to convert .wma tracks to .m4a files (as copies) on import. Nothing else in Apple Music or iTunes is designed to modify the format of files attached to the library. The closest is a feature to make new copies of existing files in a different format.
