When using the Songs view in my music library, there's no option to display the album art. This used to be an option on iTunes, but it appears to have disappeared from Apple Music. Is there a way to get this back?

Short of reverting to a fully working version of iTunes by uninstalling Apple Music, Devices & TV, no. One of many shortcomings of Apple Music for Windows, and with no upsides I've yet to find either.
