How can I secure data after iPhone theft?

My phone was stolen. My phone has a password and Face ID. The thief took the phone offline and I don't have access to Find Me. I have activated the lost mode in Find Me. I went to the internet service provider and deactivated the SIM card.

I have 2 questions?

1- Can they still access my information?

2- Can Apple block my phone because there is no way to access it and the thief can't get online? (I have all the information like the serial and IMEI of the phone if needed)

1- As long as you had a passcode in place on your iPhone, the thief will not be able to access your personal information. The odds of the thief guessing your passcode is nearly impossible, and after 10 failed attempts your iPhone won’t even take any more tries.

2-Apple does not block devices. That would be called blacklisting and your carrier does that.
