I've had a GPS ONLY Apple Watch for 6+ years, and because I almost always have my iPhone with me, it has NEVER been an issue. Plus I pay about $100 less for the Apple Watch, and I do not have a $10/month cellular fee tacked onto my iPhone carrier bill. So I saved the cost of 2 GPS Only Apple Watches during that time.
I can do EVERYTHING a cellular model can do, as long as my iPhone is nearby, which is generally in the same moderate sized wood frame constructed home.
The cellular model can leave the iPhone at home and still connect to the Internet for weather, messaging, phone calls etc... But the GPS can still track your exercise without the iPhone, and sync that data to your Health app when you get back to your iPhone.
As I said, I've enjoyed the full benefits of an Apple Watch at a reduced priced by not owning a cellular model.
My Wife does own a cellular model, because she does not want to carry her iPhone when we go for walks. It all depends on what you really need.
