Highlighting across 3 or more pages

Like many others, i'm having issues highlighting text across mutlple pages in iOS books. I have just about mastered continuing a highlight from one page onto other page (though even that is much harder than it should be, esp when compared to the Kindle app!) but i cannot find a way to continue it from the second page onto a 3rd (4th, 5th etc) page. I repeat the steps to go from 1st to 2nd page, but nothing seems to happen! Ironically, it sometimes does it when i'm not trying to do it, but then i can't get it back to the 2nd page!!!

This is a major issue for me because i have a visual impairement which means i have the font size pretty much at maximum, so it is very common that i need to highlight over multiple pages. It's really frustrating and why i use Apple Books only for books i can't get in Kindle

What am i missing? Any tips?
