I’m composing a text message and…the messages start deleting themselves, as it the backspace/delete button is stuck. I even put the phone down once and watched everything I had typed disappear as if I were deleting it, from the last words text back to the first. What in the world is happening?

Does it only happen in WhatsApp?
If it happens on other apps too, then it would most likely be due to the digitizer failing on your phone. This is responsible for touch events on your screen. While it is most common to fail when the screen is cracked, it can happen at any time.
That sounds like a problem with WhatsApp and they are going to be the only ones that would be able to resolve it. There is nothing wrong with your iPhone, so Apple support will be no help. Delete the app if Meta cannot help you and the issue will be gone.
