Pages and Numbers files going all rouge and auto locking on me

I'm using a MacBook Pro M3. I've had it for around 10 months and it is great.

Recently, my Pages and Numbers documents keeping locking and I cannot save changes!

Within the last 7 days, my pages and numbers documents (ones I've created) automatically lock and prevent me from saving any changes. They also won't auto save. I've gone into a file's "Get Info" settings and clicked the lock icon in bottom right corner to unlock the file - provide my password and the lock unlocks. I close the Get Info window and then reopen it to find the lock is now locked again. I cannot save any edits to my work.

I tried making a duplicate file only to have the same issue occur again with that file. I didn't change any MAC settings or loading a new OS over the weekend. How can I fix this?
