Transferring old iPhone XS to new 15, then erasing old phone

Transferring old iPhone XS to new 15, then erasing old phone so i can give to my wife (she has an aging iphone 8). I did this partially about 2 months ago, and just need to complete the transfer to my iPhone.

Then I will "Erase all Content and Settings" on the XS and let her transfer her info to the XS.

Will this work?

How will I know if it does?

If it does, shall I then "Erase all Content and Settings"?

What could go wrong?

Yes that should work, by "Erase all Content and Settings", all your data should be wiped from the iPhone, thus bringing you back to the Hello screen for setup. Be sure to do this after you transferred your data to your new iPhone.
